  • 1/4 cup pepper paste
  • Fresh green onions finely chopped
  • Fresh parsley finely chopped
  • 3 tablespoons lemon juice

  • Quinoa Preparation: Start by washing the quinoa thoroughly. Boil it for approximately 9 minutes. Once done, rinse the quinoa under cold water to halt the cooking process. Spread it out in an open dish to allow the steam to escape and the grains to dry slightly.
  • Sauce Creation: In a pan, sauté the onions in olive oil over low heat until they turn a golden brown. Introduce the tomato and pepper pastes to the onions, letting them meld together for about 4 minutes on low heat. Once combined, turn off the heat and allow the mixture to cool.
  • Bringing It All Together: Gently fold the quinoa into the tomato and onion mixture, ensuring an even distribution. Infuse the dish with lemon juice, chopped green onions, and parsley. Before adding any salt, give it a taste. The tomato and pepper pastes often contain salt, so adjust accordingly.
